Spice Rubbed Spare Ribs

Ingredients:

1.5kg Beef Spare Ribs (can be short ribs)

1 large brown onion

800g Diced tin tomato

Sea salt (to taste)

1 teaspoon onion powder

1 teaspoon oregano

3 tablespoons red wine vinegar

3 tablespoons worcestershire sauce 

Method:

  1. Add all ingredients to your slow cooker with a cup of water & cook on high for 4 hours or low for 8.
  2. Place ribs in baking tray and add additional sprinkling of onion powder, baste with juices and bake for 10 mins 
  3. In the mean time blend all of the remaining juices in the pot until it's mostly smooth (we use a stick blender). Place the mixture into a skillet and simmer to reduce and thicken.
  4. Add a generous amount over the ribs and bake for another 10 minutes or until sticky and caramelised.
